Without knowing a lot more about each of the specific cars and your needs (how many people do you carry regularly? What's your annual mileage? Where do you do most of your driving?), that's not an easy question to answer, so I can give you some general opinion on those cars.

For starters, the V40 is much much smaller than the the other two. That might appeal in terms of parking it and it may also be a little more efficient, depending on its engine, but an S60 of the same year would be a far more desirable car - though probably more expensive, too.

The S60 should prove to be very comfortable and good to drive, though the Tucson will have a little more space in the back and in the boot. 

Hyundai has the strongest record on reliability between the two brands.
