We can’t really answer that as it will depend on the type of tracking system that was fitted, how it works and who has access to its data. Was it an aftermarket system? I think the best thing is to start by reading the operating manual. 

Saying all that, I doubt very much that, if you've disabled the tracker, it will continue to just track your mileage without including destination data.
